EGG CASSEROLE 2005
From WA ST Quilters 1 32 oz. Pkg Tater Tots - see note below * 2 c Shredded Cheddar Cheese * 1 pt sour cream (I used 3/4ths of 1 full pt) * 1# either sausage, ham or bacon Be sure and cook and drain sausage or bacon before adding to other ingredients * 1 can Cream of Mushroom Soup 6 Beaten Eggs (I used 8 for a 9 x 13 pan) Mix all * ingredients except Eggs and Tater Tots. Fold in Tater Tots Pour into a greased casserole dish and top with beaten eggs 350 degrees 1 to 1 ½ hours I added mushrooms and onions - add anything you really like to suit your own taste. Also gal who gave recipe usually adds more cheese to the top about 15 before it is done. Enjoy! She also says this can be made and frozen make sure it is totally defrosted before baking. I have started using regular frozen hashbrowns as they are a bit easier to stir into the other stuff.

Here's another one DH picked up from a friend.
Ingredients: Either sausage, ham, or bacon (cooked, drained, and cut up) 6 pieces of bread 1/2 tsp. salt 6 eggs 2 cups milk 1/2 tsp dry mustard (can leave out) Mix all ingredients except bread and meat. Put 6 pieces of bread face down (didn't know there was one side or the other) - one layer at bottom of rectangular baking dish. Put in mix. Place meat on top. Cover and put in fridge overnight. In morning, put in oven at 325 degrees for one hour. Then 15 more minutes uncovered. Eat. I take this to church breakfasts. It's gone in no time and very easy. I think we are having this tomorrow morning. I think I'll make 2 of them, my boys can eat alot. Hugs, TJ
